Traybake Recipe

This traybake is the first recipe my lovely roommate and I came up with when I first moved in. It gets you your greens and a healthy bunch of protein. This meal, while very simple, ensures you will feel full for a long time! If you are afraid that your oven will not be able to handle this meal, fret not, as our combi-oven (named Brenda) can also handle this dish. If you are still too weary to try it: cook the spiced vegetables in the pan first and only put them in the oven to melt the cheese.  

  

Traybake:
Ingredients (4 people):
-    450 gr pre-cut baby potatoes
-    2 zucchinis 
-    2 aubergine
-    400 grams of chickpeas
-    1 red onion 
-    2 packs of halloumi
-    1 tbs of paprika powder
-    1 ts chili powder
-    1 ts garlic powder
-    1 ts thyme
-    1 ts oregano 
-    2 tbs olive oil (+ a little bit to bake the halloumi in)
-    1 pack of Traybake cheese (with Italian seasoning)

The instructions: 
1.    Pre-heat oven to 200 degrees
2.    Cut the zucchini, aubergine, and red onion into small bitesize pieces
3.    Drain and rinse the chickpeas
4.    Throw the potatoes, zucchini, aubergine, red onion, and the chickpeas into a large mixing bowl
5.    Add 1 tbs olive oil, paprika powder, chili powder, garlic powder, and thyme to the mixing bowl. Toss until well-distributed
6.    Put the mix onto a baking tray
7.    Pour the tray bake cheese and 1 tbs olive oil on top 
8.    Put in the oven for 25 minutes 
9.    In the meantime, preheat a pan until hot. Slive the halloumi into thin slices
10.    Add a little bit of olive oil and sear the halloumi slices in the hot pan
11.    When the halloumi turns golden brown, remove it from the pan
12.    Serve the traybake with the seared halloumi on top
