I rarely praise my mother’s cooking skills (sorry mom), but this recipe is made with my mom’s pesto. Pasta pesto is a staple in many students’ households, but making a homemade pesto is an easy alternative that elevates the dish. If you’re worried you don’t have a fancy blender or food chopper, I have only ever made this dish with a handheld blender (staafmixer).
The easy thing about homemade pesto is that it is quite easy to make and you can add everything you want. This is quite a simple pesto, but feel fry to add beans, nuts or spinach for more nutrients.
Ingredients (for 2 people):
- 30 gr parmesan cheese
- 1 whole basil plant
- 50 ml Olive oil
- 1 glove of garlic
- 250 gr pasta of your choice
- 200 gr Cherry tomatoes
- One burrata
Instructions:
1. Boil water with a little bit of salt
2. Blend all the leaves from the basil plant, the oil, the garlic, and the parmesan cheese together until there is a smooth texture
3. Chop your tomatoes in half
4. Mix the pasta and pesto together with the pesto
5. Cut the burrata in half and divide over the two plates
